That Mushroom Festival sounds like Nirvana to me! I LOVE mushrooms! Any kind of "shrooms"!
I Googled it and it sounds amazing. Especially since Chanterelles and Porcini mushrooms (two of my favourites) are so plentiful in that area. When I was a kid my parents took my sister and myself out hunting for wild mushrooms and it was so much fun to go foraging for edible fungi.

I didn’t knowingly eat mushrooms until I was an adult.
I had no idea how they tasted because it wasn’t a vegetable we ever had at home. When I was older, if I came across mushrooms on a pizza, I’d pick them out. They tasted weird to me and had an unpleasant texture. Even when they no longer tasted weird to me, I still didn’t like them. I found out, many years later, that my mother never cooked mushrooms because she was afraid of them - and she still is. She grew up on a farm, so she was used to every other kind of vegetable. She has never explained why, but I think she was probably told that some mushrooms were poisonous and could kill you, so she just avoided them all. We tried to explain to her that the mushrooms in stores are perfectly safe, but it’s no use.
I love mushrooms now, so they must be an acquired taste!

For some reason hearing about a ‘mushroom’ festival in Colorado, that they say would have been crazy, my mind did not immediately jump to ‘pizza toppings’ and instead took it as yet another thing Benedict would be excited to explore as a (I’m assuming) novel experience for him. (For those not aware, Colorado was the first state in the US to legalize recreational marijuana and build up a robust pot tourism industry. I just figured ‘shrooms’ were the next logical step in the “Rocky Mountain High” journey 😂)

I just took it to be referencing back to his comment about "the high street of the American dream" (high street being a metaphor for business/retail in the British lexicon). It's a play on the word "high" for sure at multiple levels.
BTW: because of the high elevation of Telluride an abundance of varieties of mushrooms grow there - something the festival takes full advantage of.
